A Simple Guide to Plant-Based Ramen at Home 🍜🌱

Ingredients (2 Servings)

For the Broth:

1L vegetable stock

2 tbsp soy sauce

1 tbsp miso paste

1 tsp grated ginger

1 garlic clove (minced)

1 tsp sesame oil

 

For the Bowl:

2 portions ramen noodles

Tofu (pan-fried or grilled)

Mushrooms (shiitake or button)

Corn

Spinach or bok choy

Spring onion

Optional: chilli oil

Method

First, heat a little sesame oil in a pot and sauté the garlic and ginger until fragrant.

Next, add the vegetable stock, soy sauce, and miso paste. Let the broth simmer for 10–15 minutes.

Meanwhile, cook the noodles separately according to the package instructions.

Then, prepare your toppings: grill the tofu, sauté the mushrooms, and lightly cook the greens.

Finally, assemble your bowl. Put the noodles in first, pour the warm broth over them, and finish with your beautiful toppings.
