Choosing a plant-based approach wasn’t a trend for us. It was a deliberate decision. We set out to prove that Japanese cuisine can be inclusive, ethical, and, most importantly, bursting with flavour, without compromising on tradition or quality.
Every dish is crafted with intention: from our umami-rich, fully plant-based dashi broth to our signature “salmon” sashimi made from konjac and carefully marinated using traditional Japanese techniques that surprise even the most seasoned palates.
